Fen nettle

Nettle (Urtica dioica) is the Jeckyll and Hyde of the home garden. It has no neutral qualities, only excellent and abominable ones. On the negative side, they spread aggressively by seed and underground runners, and attack anyone who dares try to weed them out with hypodermic syringes full of irritants. And as the leaves mature, they form microscopic stones called cystoliths that lodge in the kidney to form kidney stones. On the positive side, it is nutritious and tasty, yields fibre and medicine, dries and stores easily, is an important plant for wildlife and accumulates a suite of minerals that makes it one of the best plants around to go in your compost heap.

Fortunately, there is a way to get all of the good qualities of nettle with far fewer of the negative ones. It’s called fen nettle, a subspecies of regular nettle called Urtica dioica galeopsifolia. More on this later…

There is a long tradition of using nettles in Scotland. Bronze Age bog bodies have been recovered wearing clothes made from nettle fibre. St Colmcille, who spread Irish Christianity to Scotland in the sixth century, is reputed to have lived on nettle pottage after learning the recipe from an old woman he encountered cutting the plants. Legend tells that a servant, perhaps with less faith in the wisdom of old women, mixed meat juice into the broth from a hollow spoon that he used to stir it. Samuel Pepys was served nettle porridge on his travels through the Highlands and Sir Walter Scott mentions the practice of forcing nettles under glass in Rob Roy. Anywhere in the world where nettles grow (and that is to say, almost everywhere), there is a tradition of using them. St Colmcille might be given a run for his money as the patron saint of nettle-eating by the Tibetan poet-sage Milarepa, who subsisted on them so much that his skin is said to have turned green!

Nettles have a distinctive, earthy taste that I didn’t like when I first tried them but have grown to love. The part to pick is the tips: roughly 10 cm of growth where they are still soft and break off easily. Wearing gloves helps if you don’t want to be stung. You’ll be glad to hear that even very brief cooking melts the stinging hairs and renders them powerless.

My main use for nettle tops is as a pot herb: they add a depth of flavour to leaf sauce that I look forward to every year. Whole, they are good fried or steamed, either on their own or mixed with other spring shoots, or on top of a pizza. They make a great filling for ravioli or maki. The traditional nettle soup is always worth making, although I tend to round it out with other leaves. Make a potato soup, throw in nettle tops and cook for just a couple of minutes before blending. Miles Irving, the author of Forager recommends instantly chilling the soup in a metal container plunged into cold water to preserve the colour and flavour. Dave Hamilton gives a recipe for nettle haggis on Self Sufficient-ish, while forager and herbalist Monica Wilde uses the seeds.

If you have more nettles than you can use they are easy to dry by spreading them out in a well-ventilated space. The dried tops can be crumbled and stored, to add nettly goodness to soups and stews throughout the year. Dried nettles also make a great tea, and blends well with mint. Fresh ones can be fermented into a refreshing ‘beer’, with no more added ingredients needed than sugar, yeast and a bit of lemon juice.

Nettles are so common that it may be better to forage them than give up space in your garden for them, but there is one big advantage to having your own patch. As shoots grow older they develop harmful cystoliths (hard deposits in the cell walls) and they should not be picked after they begin flowering. You can extend the season by cutting the patch down. It won’t be long before it is producing tender regrowth. This makes nettle one of the best ‘dual use’ food/green-manure crops.

This is where the fen nettle comes in. If you are going to deliberately grow nettles in your garden, wouldn’t it be great to have one that had all the taste, nutritional and wildlife qualities of nettle, without those pesky stings? Well, you can! Fen nettle is a subspecies of stinging nettle that grows in wet places across Europe. Besides having far fewer stinging hairs, it even has, in my experience, a better growth habit for the garden – more upright and less aggressively spreading.

There are two ways to propagate fen nettle, both of which I offer in my seed list. The first is by seed, but here there is a risk that the results will be a cross between fen nettle and wild stinging nettle. All nettle plants that spring up near my fen nettle patch get scrutinised with great suspicion, then either disposed of or transfered to a pot to grow on for further examination! The other method avoids this risk. Those spreading rhizomes which can make nettle such a pest make it incredibly easy to propagate: just dig up a piece and transfer it to a new home.

Seed list for 2022

With the addition of these Chinese quince seeds, that’s the list of the seeds that I have available for sowing in 2022 pretty much complete. Many forest garden seeds need stratification (winter cold). This seems to be in plentiful supply at present, but sowing of these seeds – unless it’s in the fridge – shouldn’t be put off for too much longer.

I now add seeds to the list as they become available, so it’s worth checking back every now and again. I’ve been experimenting with sending out roots and cuttings lately and have added more of these to the list. Unfortunately, for plant health reasons, I can only send these within the UK. As usual, everything is offered on a gift economy basis: this does not mean that they are free, but you can pay, swap or pay forward according to your means.

Claytonias – miner's lettuce, wood purslanes and spring beauties

The Claytonias are a very useful group in the forest garden, being very palatable species whose natural habitat is woodland.

Claytonia perfoliata, miners’ lettuce, is unusual in the genus in that it is an annual rather than a perennial. It is often grown in greenhouses in Britain as a winter salad, but it is much less commonly found grown outside. It can be difficult to get established as a self-sustaining, self-seeding population, but once you manage it makes an excellent early salad that maintains itself with little fuss. Getting a locally adapted strain might be the key to success: I spent a long time trying it with little luck until I found a population self-seeding itself in the nearby university car park, prospering despite the chemical warfare waged against it by the university’s estates department. Seeds from these plants germinate earlier and grow more vigorously than any that I have ever bought from the seed trade.

Miners’ lettuce is mild-flavoured and succulent so it makes an excellent bulk ingredient for salads. All parts are edible, including the leaves, stems and the unusual-looking large fleshy bract around the flowers. They can also be cooked, for instance in stir fries. In my garden some plants germinate in autumn and are available in small quantities through the winter. Others germinate in early spring and by March I have a good stand of it. It will grow in the open or in partial shade and likes a well-watered soil. It is rich in vitamin C: the name comes from its use against scurvy by gold miners in California’s gold rush. There are two closely related species: C. parviflora and the deep red C. rubra. I can’t find any information on the edibility of these but I’m sure they would be worth investigating: C. rubra in particular would look very striking in a salad.


Claytonia sibirica, pink purslane, is a perennial equivalent of miners’ lettuce. It is widely naturalised in Scotland, to the extent that there are locally named varieties, such as the white-flowered Stewarton flower found in north Ayrshire. It tends to form an extensive carpet in both broadleaf and coniferous woods: this looks spectacular when it flowers. In the forest garden it can be used in the shady areas under crop trees. The flavour is stronger than that of miners’ lettuce – something like raw beetroot.

Other species listed in the literature as having edible leaves include acutifolia, caroliniana, exigua, lanceolata, megarhiza, scammaniana, tuberosa, umbellata and virginica.
Finally, a number of species have edible roots, which go by the name of fairy spuds. Species include acutifolia, caroliniana, lanceolata, megarhiza, tuberosa, umbellata and virginica I haven’t managed to grow or try any of these yet but forager Euell Gibbons described C. virginica roots as tasting like sweet chestnuts when cooked.

Eating daylilies (Hemerocallis)

I’ve written a few times already about using daylilies but I thought it would be helpful to have one post to tie it all together.

Daylilies have been described as ‘the perfect perennial’, due to their brilliant colours and all round ease of growing. They tolerate both drought and frost and thrive in many different climate zones and soil conditions. They are vigorous perennials that last for many years in a garden and see off most weeds. As if all that wasn’t enough, they are really nice to eat too.

Daylily is not one species but a whole bag of them, all in the genus Hemerocallis. Plants for a Future list over 20 species and only one, H. forrestii, gets anything less than a four-star rating for edibility. Many daylilies that you might encounter do not fit strictly into any one species as they have been hybridised widely and many are listed only as Hemerocallis and their cultivar name.

I should add a few words of caution before I go any further. Daylilies are listed by some sources as poisonous to either humans or pets. Largely this seems to come from confusion with other plants with ‘lily’ in their common name, some of which are not a good idea to eat at all. Many of these plants also look superficially similar to the daylily so obviously you need to be certain that what you are eating is what you think it is (always a good idea in any case). There is a good article by Delishably on the some of the confusion that has arisen here.

All I can say personally is that I have experienced no ill effects from eating moderate amounts of the cooked flowers of Hemerocallis altissima, citrina, dumortieri, exaltata, fulva, lilioasphodelus, middendorfii and minor and a range of hybrids. Bear in mind that any individual can have an adverse reaction to even common food plants and any new food should be taken with some care. Each new species and hybrid is best treated as new rather than assuming that if you are fine with one Hemerocallis you are fine with them all. The only hazard for the genus listed on Plants for a Future is from a single source and states that large quantities of the leaves are said to be hallucinogenic, so you might want to avoid that (or you might want to try it – I don’t want to make any assumptions about my readers).

Daylily flowers are often recommended for salads, which is a bit of a mystery to me as I find them rather unpleasant raw but delicious cooked. The cooked flavour is rich, sweet and complex. The key to bringing out the best in them seems to be frying, which imparts a little bit of a caramelised taste. Perhaps the simplest method is to pan-fry them for about 5 minutes in olive oil. They might have been purposefully designed for stir-frying as their elongated shape is perfect for it. I cut up the largest H. fulva flowers for stir fries but all other kinds just go in whole. One useful property of the flowers is that they will thicken a soup or sauce and I sometimes use them like onion, chopped and lightly fried before adding any other ingredients. The flowers can be used at all stages of their development. Many people consider them to be at their best for frying as flower buds, just on the point of opening. I also enjoy the opened flowers this way and the open flowers of large-flowered species and cultivars are great for cooking as fritters or tempura. If left on the plant in dry weather the flowers will dry up and will then last indefinitely in storage. The bags of ‘golden needles’ or ‘lily flowers’ than you can find in Chinese supermarkets are dried daylilies. They seem to keep their ability to thicken a soup even when dried.

The young leaves of daylilies are edible (but see the cautions above) and I use them in a mixture with others as a pot herb or in leaf sauce. However, they are no better than many more productive plants and harvesting the leaves presumably leads to fewer flowers so I don’t make heavy use of them. They also quite quickly become tougher and more fibrous.

Another part that I don’t use for fear of weakening the plant is the roots, despite one source describing them as ‘quite possibly the best tubers I’ve ever eaten’. I’m sure, however, that if I lived in one of the parts of the world where daylilies really thrive and have become a foragable weed I would be digging them up with enthusiasm.

Growing daylilies is easy. They do best in a moist, fertile soil in sun or semi shade. There is apparently a daylily gall midge (Contarinia quinquenotata) which can lead to distorted flowers. Fortunately I have never seen it in my garden. Slugs are fond of the young growth. This isn’t a problem with established plants but new plants are worth protecting when first planted out.

Choosing a daylily is harder as they have almost become a victim of their own success. Many new varieties are becoming hard to recognise even as daylilies. The trend in breeding seems to be for ever more open flowers, with petals curved back hard – pretty much the opposite of what you want for cooking. Smaller flowers and delicate, divided petals are two more qualities prized by breeders but not by chefs. On the whole, this means that older, more traditional varieties are better for cooking. Varieties I use include Whichford, Burning Daylight, Franz Hals, Yellow Moonlight, Pink Damask and Cream Drop. You can also find double varieties of daylily which have the culinary advantage of being chunkier: H. fulva ‘Kwanso’ is one that I grow. Two common varieties that I have found rather disappointing in terms of size and yield are ‘Stella de Oro’ and ‘Corky’.

In countries where daylilies self-seed I expect there is a tendency to revert to type. If you are lucky enough to live in one of these countries and you find a particularly nice wild specimen I’d encourage you to take it into cultivation and pass it around. It’s a pity that no-one seems to be actively breeding daylilies for their culinary rather than their ornamental properties. I would certainly buy them.

Growing and eating skirret

Never mind the Lost Crops of the Incas, skirret (Sium sisarum) seems to be the Lost Crop of the Europeans. Based on my experience, it’s high time it was rediscovered.

Originally from China, skirret was clearly well established in Europe by Roman times. It was a favourite of the Emperor Tiberius, a man who, don’t forget, could have pretty much anything he wanted for his table. He liked it so much that he demanded it as tribute from the Germans. It remained widespread and popular into Tudor times and then… where is it now?

Two crops of European empires may have displaced skirret. The first was the potato. Skirret is a starchy root, a useful staple, but nothing like as productive as the potato (what is?). The second was sugar cane. One of the most striking characteristics of skirret is its sweetness: even the name comes from a Germanic origin meaning ‘sugar root’. Before ubiquitous sweeteners, this would have made it extremely attractive, even to greedy Roman emperors. Whatever the reasons, skirret faded away from gardens, tables and popular consciousness. I’d say that it has several characteristics that make it worth revisiting.

First up, skirret is delicious. It has a floury texture, a little like a potato, due to the high starch levels. Its taste is unique, but vaguely carroty, not surprisingly as it comes from the multi-talented carrot family (Apiaceae). It needs very little cooking. My favourite way of cooking it is to parboil for a few minutes, then fry in butter or vegetable fat. This gives a certain crispiness to the skin, encasing the gooey sweetness of the flesh.  Being from Central Scotland, I have of course tried deep-frying it and can report that it makes a passable chip, but it scores higher on taste than texture when cooked this way. Wikipedia has an entertaining section on skirret recipes through the centuries.

Secondly, skirret is quite easy to grow once you know how. Unlike most of its vegetable relatives it is not a biennial with a single taproot but a perennial that produces a whole shaggy bunch of roots. A dormant skirret plant can therefore be lifted, divided and replanted like any clump-forming perennial. Grown from seed, skirret produces a single ‘crown’: several shoot buds around the base of a stem, with a cluster of roots attached. Grown on, this crown will divide to form a clump made from several crowns. The clumps are easy to tease apart into individual crowns again. A cluster of roots will consist of several that are worth picking and a good number that aren’t, so my harvesting method is to dig up the clump, snip off the roots that are worth having, separate into crowns and replant. This leaves the plant with the maximum amount of resources for a good start the next year.

Thirdly, skirret ought to be an easy crop to improve. The combination of annual seed production and clonal propagation by the division of clumps means that new varieties are easy to produce and then maintain. The plants that I have grown from seed show considerable variation in root number, thickness, length and quality. I’d like to see skirret selected to produce fewer, fatter roots with smoother skin (cleaning skirret is something of a faff as the wrinkled skin tends to hold the dirt and require a good scrubbing).

One drawback to skirret is that the roots can have a woody core which cannot be softened by any amount of cooking and which is not particularly practical to remove. Guides suggest that this is a problem of young plants that goes away on older ones, or that it is caused by a lack of water while growing or that it is under genetic control and varies from one plant to another.

I have kept careful records of the qualities of my plants from year to year for the best part of a decade and I don’t think that the thing about older plants is true. Similarly, if there is a magic recipe for growing them without a woody core I am yet to find it. On the other hand there does seem to be a degree of consistency about how prone to woodiness an individual clone is, although this is accompanied by some year-to-year variation. I assume that genetic and environmental factors are interacting in unpredictable ways.

A second yield from skirret is the immature flower stems, which have a very nice carroty taste when boiled or steamed. They are fairly substantial and produced in reasonable volume, but they are fast growing and soon harden off, so if you want more than a brief harvest you will have to freeze some.

Starting skirret from crowns may be easy, but to get a crown in the first place you either have to shell out a fair bit of money or you have to start from seed. Skirret is not the easiest to grow from seed as like many of its relatives it needs a period of winter cold (stratification) to encourage it to germinate. If it is anything like most Apiaceae the seed will lose viability quite quickly, so it is a good idea to source current-year seed in autumn and start stratifying straight away.

For cultivation, skirret seems to like moist, free-draining soil in full sun. It’s said not to like hot weather but this isn’t a problem that I experience much. I’d advise growing it in rich, well-fertilised soil as a poorly fed skirret will produce thin roots that aren’t worth harvesting. Mature crowns need to be spaced at 30cm or more. Giving it a mulch is a good idea to help keep moisture in and suppress early weed growth. I have mine planted in a bed with compost dug in and a mulch of leaves over the top. It will grow up through the mulch and require little to no weeding as its strong growth suppresses weeds later in the season. Skirret can be left in the ground until needed: towards the end of the season, you might want to mark where the plants are as there can be little sign once the leaves die down!

Growing and eating wild garlic

Very few of the really shade-tolerant vegetables are as productive, versatile and useful as wild garlic (Allium ursinum), also known as bear garlic, ramps or ramson. When I was young, on a family holiday in Wales, I discovered a wood carpeted with ramsons. Overwhelmed by such exuberant bounty, I stuffed my pockets with leaves. In the car on the way home my parents noticed a certain odour taking over the space and after a quick search my foragings were evicted. I suppose it could have been worse, it could have been me. Nowadays I have my own tame patch of wild garlic in my allotment and I can harvest it when I like.

As with many perennial crops, there is a useful synergy between wild garlic and the cultivated kind (Allium sativum). It starts to be ready just as stored bulbs are usually running out, some time in February or March, and runs through until about June. Wild garlic can be used pretty much anywhere you want a garlicky flavour, with the caveat that the flavour doesn’t survive cooking for long, so you generally need to add it to cooked dishes near the end. Ramson pesto packs quite a punch. I like to chop leaves into salads: whole leaves are a bit strong to eat in bulk but chopped roughly and mixed with other leaves they are delicious. Layering a few leaves into a sandwich works well too. For some seriously local food, you can try using it to supply the garlic flavour in broad bean hummus.

However, if its garlic flavour were the only thing that wild garlic had going for it, it would be best regarded as a herb and grown in a small patch in a shady corner. What makes it useful as a bulk vegetable is the very fact that it loses its garlic flavour when cooked for more than a few minutes, leaving a very tasty, oniony green. As such I use it anywhere where I would use onion, particularly as the base of a sauce, be it pasta, curry, stew or soup. You can also substitute it for spinach for delicious variations on dishes such as lasagne. It makes an excellent pot herb, either on its own or mixed with other leaves that are available at the time, such as annual and perennial kales or leaf beet. One thing to be careful with is that wild garlic quickly develops a rather unpleasant burnt-onion taste if allowed to dry out while cooking, so you need to take care to keep it moist. In our household we love wild garlic on pizza but we always layer it at the bottom so that the other ingredients protect it.

Almost all parts of wild garlic are usable, including the leaves, stems and flowers. The flowers look amazing in a salad. The bulbs are also usable once the leaves have died down, but they are not as good as the bulbs of cultivated garlic and they don’t store very well once lifted. And of course, if you eat all the bulbs then you don’t get the other parts. That said, if you have a good supply of them you might want to try the recipe for pickled wild garlic bulbs that can be found – with many others – on the excellent Eat Weeds blog.

You can harvest wild garlic simply by pulling off individual leaves or, for less garlicky hands and to speed things up, you can cut a clump at a time with scissors. I generally put my wild garlic leaves in a bowl of cold water for five minutes as soon as I get home, to preserve and wash them. They’ll then keep for at least a week in the fridge. Another way of harvesting that gives a slightly different product is to dig up a clump and then prepare the individual plants by cutting off the roots and removing the sheath of the bulb. The whole thing then hangs together in a sort of ‘spring onion’ version of wild garlic. Fried in plenty of oil and dipped in a sauce these are gourmet food indeed.

Ramsons are an easy plant to grow, flourishing in the parts of the garden that most other plants avoid. They are a plant of deep woodland, so they like plenty of shade and a moist, humus-rich soil. Once you have got them established they will generally self-seed (to the point of nuisance if they weren’t so edible). Their habit of dying down in the summer makes them easy to manage as you can choose this time to top-dress them, mulch them or hoe over the top of the bulbs. They can even be used in a strip as a bit of a barrier against the spread of other plants. During the spring they suppress other plants by the strength of their growth and during the summer you can hoe the strip. Ramsons are capable of growing through quite a thick mulch: their leaves form green spikes that punch up through mulch before unfurling. Alternatively the dormant period is long enough that you could fit in another crop or a green manure, or interplant wild garlic with another perennial that makes use of the later part of the year.

Wild garlic will tolerate growing in the open, but as soon as there is hot sun its leaves will burn off and it will retreat to its bulb. It is worth growing some wild garlic in the deepest shade you can find, in which case it will persist until midsummer. Wild garlic can be raised from seed or, more easily, grown from bulbs. The bulbs do not store like those of cultivated garlic, they dry out and die quite quickly if they are not stored moist. They transplant very well ‘in the green’ (while the bulbs are growing), which also avoids the problem of forgetting where you have planted the bulbs! If you are in Scotland, don’t forget that it is legal to pick leaves, flowers and seeds for your own use without the owner’s permission but not to uproot a plant (e.g. by transplanting bulbs) or to harvest commercially. If you want to do either of these you will have to ask the owner.

One word of warning, whether you are foraging wild garlic or growing it. While wild garlic is entirely edible, it can be growing in with leaves of plants that are quite poisonous, as most of the spring bulbs are. It is hard to mistake wild garlic for anything else when you look closely – the combination of the broad, soft leaf and the garlic smell is unique – but if you are picking lots of leaves you might become a little careless. In the photo below you’ll see a patch of poisonous snowdrops growing in about the wild garlic, so if you are foraging, take care, and if you are growing I would recommend removing any snowdrops, bluebells or other spring bulbs from the same bed.

In North America, the name ramps has transferred itself to a similar-looking plant, Allium tricoccum, also known as wild leek. It’s a fascinating piece of convergent evolution. The two species are actually rather distantly related within the Allium genus, but by adapting to the same woodland niche they have come to be very similar in both looks and behaviour. Both are spring ephemerals, coming up and dying down early to make the most of the spring sunlight before the trees leaf up. Both carpet the ground and have broad, delicate leaves, adapted to capturing as much light as possible and dropping the usual allium adaptations to drought and strong sunshine. Despite this there are differences reflecting their divergent ancestry. The North American ramps has shallower bulbs than the Eurasian and the whole plant is more commonly used rather than just the leaves. The leaves and bulbs become tough and inedible and start to die down once the plant starts flowering, unlike A. ursinum, in which leaves and flowers occur together.

Real spring onions

Last year was the warmest March on record: this year it has so far been the coldest. Spring ain’t what it used to be. None the less, it’s reliably time to harvest the ‘spring onions’.

I don’t mean the things you buy in the shops as spring onions (or scallions) since I don’t grow them. Let’s face it, onions are a pain to grow from seed. You need lots of added soil fertility and fanatical weeding of things that look regrettably similar to grass seedlings. Then, just as they are starting to look after themselves, you dig them up and eat them. By this time it’s usually August, which isn’t spring, not even here in Aberdeen.

Fortunately there are two perennial vegetable species which produce excellent spring onions even when it’s still snowing and with very little fuss for the rest of the year: tree onion (Allium cepa proliferum) and welsh onion (Allium fistulosum).

Tree onion is the same species as the ordinary onion. A lot of allium species can produce either flowers or tiny bulbs called bulbils (or both) in their flower heads and tree onion is a kind of onion that goes for all bulbils. These often sprout when they’re still on the plant, giving it a tree-like appearance. The stem then usually falls over, giving the plant another of its many names – walking onion – as the bulbils put down roots and the plant ‘walks’ around the garden. It also reproduces by bulb division underground, like a shallot or a daffodil.

This gives two ways to exploit tree onions for spring onions. First you can dig up the parent plant when it resprouts in the spring, divide out some of the bulbs and replant the rest. The other way is to gather the bulbils when they are produced later in the year and plant them out into a bed where they will grow on into very well shaped spring onions. It’s kind of like having a free supply of onion sets for spring onions and yet another name for this plant is ‘topset onion’ (You can also let them grow on into bulb onions, but they tend not to be very big.). You can plant some in the autumn for spring growth as they are extremely hardy but they will also keep well if you store them in a cool, dry place, so you can make successional sowings later on in the year too.

Welsh onion is a different species from regular onion but it’s very similar to tree onion. Instead of bulbils it produces a rather fleshy flower head which can also be used as a flavouring or left to produce seed (picking the flowers stops the plants producing seed and diverts their energy back into making bulbs). Like tree onions they divide underground and can be lifted and divided as spring onions in March and April.

Both species can also be harvested by picking leaves in the summer. I find that welsh onion makes bigger and more regular-sized spring onions by division and tree onion is better for leaves, partly because you can use the bulbils to produce a really dense patch. So the best use is probably welsh onions for division in the spring and tree onion for leaves and sets for growing on. If you allow welsh onions to flower you will be very popular with the bees.

Real spring onions can be used in all the same ways that you would use the seed-grown ones. My favourite is spring onion sambar: you fry a large handful of whole spring onions until they are soft, then add tamarind, coconut and spices to make a sauce and simmer for a few minutes. It’s a great way to forget the sleet driving at the window.

Self-seeded parsnips

A few years ago, I took over an allotment that had been abandoned for some time. It was an education in how long any of our cultivated crops would last without us lavishing constant attention on them. The autumn raspberries had taken over one end of the plot and there was still a cheerful patch of rhubarb, a plant that I always assume will conquer the world after a nuclear war, but everything else had disappeared under a sea of willowherb and docks.

When I started digging however, there was one more surprise survivor. A healthy crop of large, well-shaped parsnips (Pastinaca sativa). Judging from how long the allotment had been unused, they must have been several generations away from the ones originally sown by the gardener. I was inspired to allow parsnips to go feral in my forest garden.

Having all but forgotten about them, I dug up my first self-seeded parsnip yesterday. It turned out to be a beauty. It was around 300mm long, weighed in at 700g (one and a half pounds) and, despite my worries that it would be all worm-eaten, was almost flawless.

This particular parsnip was growing under in the shade of an apple tree. The soil it was in is deep and sandy but doesn’t get fed much apart from an annual mulch of leaves. The only effort that went into this parsnip all year was when I dug it up. The remainder have disappeared under a layer of snow for just now, but there seemed to be a good number.

So we feasted on parsnip this evening. First parsnip chips, then noodle soup with parsnip. That’s chips in the British sense of chunky fries, not in the American sense of crisps. Sliced up and deep fried, they cook very quickly and are delicious, fatty and sweet: excellent winter food if perhaps not the most healthy way of enjoying them. Very little was wasted: young parsnip leaves are also edible, tasting to me rather like celery leaves. Some sources say that they can be treated as a leaf vegetable, but I would say they are better thought of as a seasoning. Speaking of seasonings, like so many of their relatives in the carrot family, parsnip seeds are also useful as a spice, tasting a bit like dill. This is very useful for me because we have motley dwarf virus in the allotments which cuts down any actual dill I plant quite quickly.

So far, very encouraging. I’ll keep on allowing my parsnips to self seed, even if that does mean taking the biggest and best of them every year and replanting them to go on and provide the next generation. P.S. One final use of parsnip: the Plants for a Future database says that a tea made from the root is good for ‘women’s complaints’. From observation of my girlfriend, I can only assume that this means that it helps Linux work better. Very strange.

Paths

There is one kind of plant that really doesn’t belong in a forest garden, and that is grass. When I got my allotment, it had the traditional layout of bare soil beds with raised grass paths between them. The old boys actually seem to enjoy maintaining these structures, mowing the tops to perfection and deploying a range of implements that a hairdresser would be proud of to keep the sides in trim. If this is neglected for even a short while, the grass flops over the sides, first making a perfect habitat for slugs then starting to grow into the beds.

I decided that no matter how much work it took to replace the paths with something more sensible, it couldn’t be more work than keeping the things. The turves were dug up and piled, upside-down, to compost. I now have three main walking surfaces in the garden. The short stretch that bears the most traffic is slabbed. The other main paths are all woodchip and across some of the beds I have walking boards.

Woodchip is a great path material for several reasons. It is particularly high in carbon which makes it a very infertile medium. Woodchip should never be dug into the soil or, in my opinion, used as a mulch on top of beds, since the soil bacteria pull nitrogen out of the soil to help them break down the carbon, robbing your plants of essential fertiliser. Using it on paths turns its downside into a virtue. If plants do seed into a bed of woodchip, its soft, granular nature means that it is very easy to hoe them off. If you have ever tried to hoe gravel you will understand what a benefit this is. Finally, it is usually a cheap, easily available material. We just get the City Council, who produce mounds of the stuff and are delighted to get rid of it, to drop us off a heap every year. This year’s load turned up last week.

To make the woodchip paths, I dug out about a foot of soil and used it to build up the beds. I lined the bottom of the trenches with any cardboard and bits of old board that I could scavenge, but didn’t worry about this where nothing came to hand. Then I simply filled them with as much woodchip as I could lay my hands on. They have to be hoed in the spring and topped up about once a year, but neither job is urgent and they can be done whenever there is time.

As well as being much less work, woodchip paths are far more robust than grass ones, something I’m appreciating in the current wet weather as the grass paths are trampled to mud while the woodchip ones show no ill effects at all.

Walking boards are even simpler. I only really use them in the annual parts of the garden as there is no problem in stepping on the soil in the perennial parts. They are simply boards laid down on top of the soil to make a path. They serve two main purposes: stopping soil compaction and acting as slug traps. If you turn over any piece of wood lying on the ground you’ll see what I mean: the slugs retire there during the day and can be collected easily. The boards also provide habitat for beetles and centipedes which eat slugs and their eggs, so the slimy molluscs get a double whammy.

Here’s the end result. The forest garden has been thoroughly put to bed for the winter, with a mulch of leaves on the growing areas and a new layer of woodchip on the paths.
